Two Green Fruit Smoothie

Now that the weather is starting to warm up, refreshing, “cooler” foods are coming to mind. For me, smoothies are in order. Yesterday I concocted something different I wanted to share…it was fabulous! It’s made with both raw baby greens AND green tea. Lots of fruit is added for sweetness. It’s filling and delicious. Two Green Fruit Smoothie
Makes about 2 Cups

12 whole almonds (raw, not roasted nor salted)
12 blueberries, fresh or frozen
1 cup chopped fruit of choice (I used kiwi and fresh pineapple)
1 banana, fresh or frozen
1 large handful of raw mixed greens (ie spinach, baby kale)
1 rounded teaspoon of milled chia seeds or flax seeds
1 cup (8 oz) freshly brewed plain green tea, cooled
Sweetener of choice, optional

Place all ingredients into a blender in the order listed. Process until smooth. Serve immediately. Enjoy!

Sweet Potato Pie Smoothie

Here’s yet another smoothie. (I told you I was getting ready for warmer weather!) It’s  reminiscent of the fall holidays…so remember this when harvest time arrives! It’s fabulous. Sweet potatoes, pumpkin pie spice, milk of choice, and sweetener of course, all topped with whipped cream, cinnamon, and a few chopped pecans. It tastes like yummy pie filling. It’s delicious and oh-so-good-for-you, being full of beta-carotene and lots of other nutrients from the sweet potatoes. It’s a vegetable turned dessert! Blue Moo Smoothie

I’ve been experimenting with smoothies a lot lately. Spring is coming (although here in the Midwest, it seems like it’ll be forever before it arrives). People will be looking for “cooler” foods to enjoy when the weather warms up. Hence, I want to have a lot of such recipes ready. So…I’m enjoying smoothies galore, even if I have to drink them with my coat on!

A Blue Moo smoothie is simply a combo of blueberries and…you guessed it…milk of your choice. I’ve thrown in a banana for richness, a little flax meal for some omega-3s, and of course some sweetener of choice. Bingo…another smoothie!
